Tex Mex Chicken

Since today is the start of my 30 Day Clean Eating Challenge. I thought I'd share one of my favorite recipes.

 love minimal effort cooking. I also love my slow cooker. That little magical contraption in which you throw a bunch of stuff, and dinner is ready after a long day is perhaps one of my favorite gadgets. It seriously makes the most amazing things~ Like my Tex Mex Chicken. I usually make a big batch and then use them for Wraps, Enchiladas, and stuffed Bell peppers.

Tex Mex Chicken
 Ingredients:
1 1/2 lbs boneless, skinless chicken breast
1 Tsp Knorr Chicken Seasoning
1 1/2 tbsp taco seasoning
1 jalapeno, seeded and sliced
1 16 oz jar of salsa
1 yellow onion, diced
1 Can of Corn
1 Can of Black Beans
1/2 cup chopped cilantro

1 Mexican squash(optional)
1 lime (To garnish)
1 Avocado (To garnish)
Ice burg Lettuce eaves for wrapping



Directions:
Rub seasonings all over chicken breasts, then place breasts at the bottom of the slow cooker.
Scatter onion and jalapeno over chicken breasts. Pour salsa over top, then Corn, Beans, and cilantro. Place lid on slow cooker and cook on Low for 5 hours.
Shred chicken after 4.5 hours  and stir & combine. 
To serve lettuce wraps, spread one lettuce leaf out and scoop about 1/4th cup chicken mixture on top. Roll up lettuce leaf and garnish with Avocados and Lime. Enjoy!
