Shrimp Ceviche Recipe~Mexican Style

I am a self proclaimed fish lover{my family can definitely vouch for me}. 
One of my favorite dishes is shrimp ceviche , it's basically a healthy & filling lemon infused shrimp salad.  And, it's usually one of the first things I order whenever we are in southern California or Mexico. 

Ceviche can be served in tacos, in a cocktail or just eaten with chips. Whichever way you decide to serve it, it is bound to be a crowd pleaser{well among your fish loving friends,ofcourse;)}. Traditional ceviche consists of raw seafood tossed with an acidic marinade{Lemon & Lime} that "cooks" the fish. But you could totally cook the shrimp if you're a bit nervous about the marinating process.  I've included the recipe below in case you want to taste this delicious salad for yourself;).
Mexican Shrimp Ceviche Recipe

Ingredients
2-3 lemons {1 1/2 Cups} 
1 pound of  raw Shrimp {3 Cups},chopped
1/4 cup white onion, chopped 
1 cup chopped fresh cilantro 
2 tomatoes chopped 
1 avocado chopped{optional}
1 cucumber chopped  
Tortilla chips
2 tablespoons of Cholula hot sauce{optional} 
Mayo 1/3 Cup 
Salt & pepper to taste
Directions:
Chop the tomatoes, Cucumber, onion, cilantro, shrimp & Avocado{if you have it}.
Toss the shrimp in a bowl with the Lemon juice & throw in a pinch of salt. 
 Then cover with plastic and let it marinade in your fridge for 3 hours. Be sure to periodically toss the shrimp to make sure it's marinading evenly.
I like to add the cilantro and onion two hours into the marinade
 After the marinade process is over, add the tomato, cucumber, avocado, mayo and Cholula. Then combine mixture. 
 Then serve with your favorite chips & enjoy!
 Hayden is a mini-me when it comes to seafood. Maybe it's because I craved seafood All.The.Time when I was expecting with her, who knows. But whenever we make this, she goes to town and devours half the dish!
