Today I am sharing one of my favorite salads. This is from a little restaurant in Provo, Utah called Cubby's. They have a wide selection on their menu, but every time I'm in the area, I make sure to stop in for their tri-tip salad. It is a really great gluten-free option that is mouth watering & filling!
Now that we live in Ohio, we haven't been able to find anything remotely similar. So, I decided to make my own version{which turned out to be really dang close to the original}. If you've tried this salad before, then you know how addictive it can be. I have been living off of this salad for the past couple weeks and I don't see me switching it up anytime soon{yes, it's that good}.
It's been so interesting for me to see the wide range of cravings this pregnancy {a midst my incessant nausea}. It feels like the last month or so my palette has changed dramatically. As of late, I have been gravitating towards dark greens, fruit & steak. Clearly, it's my bodies way of telling me to increase my nutrition.
The salad is made up of sliced almonds, roasted bell peppers, scallions, dried cherries, tomatoes, feta cheese, spring greens & romaine lettuce & tri-tip steak{I'm sure you could substitute your favorite steak}.
I don't think you can do this salad justice without the cilantro-lime vinaigrette dressing. It pulls all the flavors together and truly completes the meal.
Cubby’s Tri Tip Steak Salad
Ingredients
- 2 Cups sliced tri tip steak {Or your favorite steak}
- 3 scallions, chopped
- 1 C chopped tomato
- ½ C toasted slivered almonds
- ½ C sliced roasted red pepper
- ½ C dried cherries
- ½ C Feta Cheese, crumbled
- spring greens and romaine
Dressing
- ¾ C Avocado oil
- ⅓ C lime juice
- ⅓ C lemon juice
- 3 tsp lemon zest
- 1 Tbsp dried minced onion
- ¼ tsp red pepper flakes
- 3 Tbsp white vinegar
- ½ tsp salt
- 1 bunch cilantro, chopped
- 1 Tbsp honey
- 1/8 tsp spicy brown mustard
Instructions
Dressing
- Place all ingredients into a blender.
- Blend until smooth.
- Assemble salad, finish it off with the steak and pour dressing over it.
- Enjoy!
