On my last post, I talked about my love of Cubbys and their healthy & delicious menu items. This is one of those that, I saw and couldn't wait to try. Growing up, I wasn't a huge fan of the sweet & savory combos but over the years my palette has changed and I've really grown fond of the combo.
This recipe is pretty simple & is packed with so much flavor! I had made a huge batch of this cilantro lime vinaigrette for my tri-tip salad but since I'm still not sure how long it will keep, I decided to add it to the wild rice. And, the vinaigrette really transformed the dish from an ordinary one to a memorable one that we will make on a weekly basis.
Sweet & Savory Wild Rice Salad
Ingredients
- 2 Cups cooked chicken
- 2 Cups Wild Rice
- 1 cubed apple
- ½ C toasted slivered almonds
- ½ C craisins
- ½ C goat cheese, crumbled{optional}
- ½ C avocado{optional}
- 2 C kale
- 2 Tbsp Knorr chicken seasoning
- 1 Tbsp Olive oil
Dressing
- ¾ C Avocado oil
- ⅓ C lime juice
- ⅓ C lemon juice
- 3 tsp lemon zest
- 1 Tbsp dried minced onion
- ¼ tsp red pepper flakes
- 3 Tbsp white vinegar
- ½ tsp salt
- 1 bunch cilantro, chopped
- 1 Tbsp honey
- 1/8 tsp spicy brown mustard
Instructions
- Cook wild rice in rice cooker with 1 Tbsp chicken seasoning until fully cooked.
- Boil chicken in 1 Tbsp chicken seasoning for 10 minutes{about half way}, then pull it out & chop it into small pieces then set aside until rice is done cooking.
- For the dressing: Place all ingredients into a blender & blend until smooth.
- Place the chicken on a medium hot pan & cook thoroughly.
- Then, add a Tbsp of olive oil to the pan and add the kale, apple and stir until apple is semi cooked{about 4 minutes}.
- Stir in the wild rice, until well mixed.
- Remove from heat & transfer to serving platter.
- Top the dish with, craisins, almonds, cheese and avocado.
- Then drizzle on 1/2 cup of dressing and toss salad to evenly distribute the vinaigrette.
- Enjoy!
