Spicy Chicken Avocado Flautas Recipe


I know I've told you about my affinity for spicy foods. I don't know if it's because I started eating salsas at the age of four but food doesn't quite taste the same without a little heat from peppers.
Today's recipe is full of flavor and can be made in ten minutes! Which is perfect for busy days! Have you ever tried flautas before? Around these parts they are better known as "taquitos". This is one of my hubbies favorite dishes, and one we try to make often. It is fairly easy to make and doesn't call for any exotic ingredients. 

These flautas are the epitome of comfort food for me. They come out just a little bit crispy on the outside but are soft and moist on the inside. Mmm, so good!

Even though you can eat these flautas alone, I always like to pair them with a dip or sauce. I topped my flautas with this tomatillo salsa.
Here is what I used for the recipe : shredded chicken{seasoned with Knorr chicken seasoning}, corn tortillas, white onion, cilantro, jalapeno, lemon, avocado, cheese and mayo.
 You'll start by mixing the cilantro,onions and avocado with your seasoned chicken.
 Then you'll add in the cheese & jalapenos.
 Lastly you'll add your mayo.
 Once your chicken is ready, pop your tortillas in the microwave for about a minute to make them pliable and easy to roll. Then you'll lay out your tortilla and add a large spoonful of your chicken mixture & roll the tortilla{with the seam down}.
Add a half a cup of olive oil to a frying pan over medium heat. Then you'll place your flautas seam down into the oil. This will allow them to stay closed without using toothpicks. 
With your tongs, you'll rotate them every 20-30 seconds to keep them from burning.
Once they are evenly cooked & golden, remove them from heat. 
Serve with your favorite, salsa and top with queso fresco. Enjoy!
FLAUTAS Recipe

INGREDIENTS
  • 4 chicken breasts, cooked in knorr chicken seasoning and shredded
  • 1/4 cup mayo 
  • 1 bunch Cilantro
  • 1/3 cup onion
  • 1 avocado
  • 1/4 cup juice of a lemon
  • 1/8 cup chopped jalapeƱos, seeds removed
  • 1 cup mexican shredded cheese
  • 20 corn tortillas  
  • Garnish: cilantro, queso fresco, additional jalapeƱos, dipping sauces such as this tomatillo salsa
INSTRUCTIONS
1. You'll start by mixing the cilantro,onions and avocado with your seasoned chicken. {You can also use canned chicken and just season with knorr seasoning}
2. Then you'll add in the cheese & jalapenos.
3.  Lastly you'll add your mayo.
