Quick Dinner~ Stuffed Bell Peppers Recipe

September is already looking crazy for us. We have two girlies going to school this year, a birthday party to plan & family coming to stay with us at the end of September, so easy meal solutions are kind of a necessity in our home.
More often than not, we will have beans, ground turkey & Kraft Natural Shreds in our fridge + a few pantry staples, so stuffed bell peppers is an easy choice on days when I haven't given dinner much thought or when we are running from one activity to the next. Plus, it's a pretty wholesome balanced meal that the whole family enjoys{win, win}.

I make a few variations of these stuffed bell peppers depending on the crowd, but Today I'll be sharing the recipe my kiddos enjoy the most. 

Here's what you'll need: bell peppers, corn, beans, cilantro, tomatoes, onions, ground turnkey,garlic, seasonings & shredded cheese{I also like to add a bit of Kraft Natural Chunk jalapeno cheese in my peppers for some extra heat}.
First step is to brown the ground turkey in a large skillet over medium high heat for 5 minutes or until its cooked almost through. 
Then, you'll add the onion and garlic and cook until vegetables are softened.
Next, you'll stir in the diced tomatoes, beans, corn, tomato paste, and seasonings, cook for 15 mins.
Meanwhile, cut off the peppers in half and spoon out the ribs and seeds, then rinse. Lightly sprinkle the inside of the peppers with kosher salt and place in a microwave safe dish with ¼ cup water. Cover with plastic wrap and microwave for 5 minutes or until they start to soften.
Then, transfer to a baking dish and fill the peppers with the hot meat and bean mixture. Sprinkle with cheese and bake for 15 minutes or until peppers are tender and cheese is browned.
Or if you have a toddler that loves shredded cheese, like we do, just serve warm:).
Stuffed Bell Pepper Recipe
Ingredients
  • 1 pound lean ground turkey 
  • 4 bell peppers
  • 1 can of corn 
  • 1 can black beans
  • 1 cup cilantro, chopped
  • 1/2 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups of tomatoes or 2 cans petite diced tomatoes with juice
  • 2 tablespoons concentrated tomato paste{optional}
  • 1/2 tablespoons crushed basil
  • 1/2 teaspoon paprika
  • 1 tablespoon steak seasoning
  • 3/4 tablespoon chicken seasoning
  • ½ teaspoon cumin
  • kosher salt and freshly ground black pepper to taste
  • 1 cup shredded Kraft's Natural shreds:Mexican style cheese 
  • 1/4 cup of Kraft's Natural Chunk Jalapeno cheese{optional}
Instructions
  1. Preheat the oven to 350 degrees F.
