Buttermilk & Wild Rice Stuffed Cornish Hens

This buttermilk & wild rice stuffed Cornish Hen Recipe is perfect if you are wanting to switch up your usual holiday menu. It's a simple recipe but is incredibly moist & full of flavor!
Have you ever had Cornish Hens? They are a favorite of mine. I happen to think these dainty hens have a special flavor all their own. And when prepared with my seasoned buttermilk marinade they are just heavenly.
To create this dish, I headed to my local Kroger to grab a couple Tyson® Premium Cornish Hens. They came in a pack of two & were located in a large freezer case near the meat section.

I went with Tyson® Premium Cornish Hens, because they're all natural{that's right, no added hormones or steroids} & I don't have to worry about any artificial ingredients or preservatives.
Cornish Hens always have an impressive gourmet look yet are deceivingly simple to cook. Although they are perfect for this holiday season, they are also great for turning ordinary nights into special occasions.
Here's what you'll need for this recipe: two Cornish Hens, buttermilk, wild rice, butter, thyme, chicken seasoning, paprika, cayenne, garlic powder, potatoes, celery, carrots and onion.
After you've rinsed & dried the Hens, you will place them in a large bowl & season it with chicken seasoning, paprika, cayenne, garlic powder, oregano, thyme salt & pepper.
Then you will place the seasoned hens in buttermilk, cover with plastic wrap and place in fridge for a minimum of 2 hours.
Next you will place the chopped vegetables in baking dish & set aside. Then add the cooked wild rice and insert in Hens. Lastly you'll place the hens over the vegetables with butter and cover with foil. You'll bake them for 1 hour and 15 minutes at 425 degrees.
You will baste hens with their juice about every 20 minutes to keep them moist.
You will leave hens uncovered for the final 15 minutes. Then remove from oven, plate & enjoy!

BUTTERMILK CORNISH HEN RECIPE

INGREDIENTS:
2 Cornish game hens, thawed
3 Cups of Buttermilk
2 Cups of Wild Rice{cooked}
1 Cup of Butter
3 Thyme sprigs
2 Tbsp Chicken seasoning{I use Knorr}
3/4 Tbsp Paprika
1/2 Tsp Cayenne
1/2 Tsp Garlic powder
1/2 Tsp Oregano
1/2 Tsp Salt & Pepper
3 Potatoes
3 Celery
3 Carrots
1/2 Onion

INSTRUCTIONS:
1.Rinse the Cornish Hens, including the cavity. Dry with paper towel, set aside.
2.In a large bowl, rub half of seasonings on Hens{Chicken seasoning, paprika, cayenne, garlic powder, oregano, thyme salt & pepper}.
3.Place the seasoned Cornish Hens in buttermilk, cover with plastic wrap and place in fridge for a minimum of 2 hours.
4.Place chopped vegetables in baking dish and set aside.
5.Cook wild rice according to package directions and insert into Hens.
6.Preheat the oven to 425 degrees.
7.Pat dry the Cornish Hens, to remove the excess buttermilk.
8.Place the Cornish Hens on a roasting pan and spread butter & the rest of the seasonings over hens.
9.Cover with aluminum foil and cook for 1 hour and 15 minutes.
10.Baste Hens with their juice every 20 minutes.
11.Leave uncovered for the final 15 minutes.
12.Brush with a little butter and Enjoy!
