Easy Sushi~Spicy Tuna Roll

There are so many reasons why on any given night I could eat a Sushi roll over just about anything else. The first being, they are simply delicious! Plus, they have just the right amount of protein to leave me feeling light & satisfied. And, making them really increases the eating experience as you play with different types of fish, flavors & textures! This past week, I prepped everything to have Sushi ready to eat in under ten minutes. I made a few variations, but one of my favorites was the spicy tuna roll. 
I have a couple of secrets for making this quick & easy. The first is that: you can make your Sushi rice ahead of time & refrigerate it until you're ready to use it{at which point you'll microwave it}. The second is: that you can use canned tuna. I used Bumble Bee® Solid White Albacore because it has a firm texture, light color & a fresh taste that is absolutely delicious.   
Are you ready to make this for yourself? 
Here's what you'll need:
1½ cups prepared sushi rice
5 oz. Bumble Bee® Solid White Albacore in Water 
3 tsp. Sriracha sauce 
2 tsp. chopped green onion 
Avocado{julienned}
Cucumber{julienned}
1 sheet nori, cut in half 
1 Tbsp. white roasted sesame seeds 
1 Tbsp. mayo 
Bamboo mat {covered with plastic wrap}  
Instructions
1.Combine your tuna, with mayo, Sriracha sauce & green onion.
2. Heat your sushi rice & set it aside. 
3. Lay a sheet of nori {shiny side down} on the bamboo mat. Spread 3/4 cup of rice evenly onto your nori sheet. Then, sprinkle the rice with sesame seeds.
4. Turn over your nori sheet{so that the rice is touching the mat}. 
5. Place your cucumber, avocado and tuna on the nori sheet.
6. Grab the bottom edge of the bamboo mat & roll the mat over the filling. Continue rolling it forward with gentle pressure.
7. Cover your rolls with plastic wrap{to avoid the rice sticking to your hands} & begin cutting with a very sharp knife {It helps to wet your knife in between cuts}.
8. Remove plastic wrap & garnish. 
For a mild spicy Tuna roll; combine Sriracha sauce & mayo and use it to garnish each roll. 

But If you want an extra spicy roll; simply top with Sriracha sauce. Enjoy!
