Kid Friendly Pumpkin Chocolate Chip Muffins

You might be thinking, aren't all muffins kid friendly? Nope! But you'll be happy to know that these are. They have a secret ingredient that is perfect for little ones struggling to grow. 

Both Mallorie and Hayden have been on the small end of the spectrum since they were born. And I still remember the day when Hayden {my now four year old} dropped off the growth charts and I got an earful from our pediatrician {not my favorite day, for sure}. She was only 3 months old at the time and suffered from horrible G.I. issues, which had to be addressed by a specialist. She wouldn't sleep longer than an hour at any one point in time and so of course eating was not what she wanted to do(since it was part of the problem and a constant source of pain). Those stressful days have thankfully come and passed but the memories will stay with me forever. That is why I'm really excited to share today a kid friendly recipe tailored for picky eaters and for children needing a little extra nutrition.

I made a Kroger run earlier in the week to pick up everything for this recipe {since there was a $3 savings on my secret ingredient aka PediaSure® Grow & Gain}.
Even though Madison {our 7 month old} is our chubbiest baby yet, our home is still well stocked with PediaSure® Grow & Gain because I find that my older two will drink it up {without complaints}, as well as in a slew of yummy recipes like these pumpkin chocolate chip muffins. We're buckling down on their nutrition though and giving it to them twice a day for the next 8 weeks, along with a well-balanced diet, to help them gain a little weight & height.
What I like about this recipe, is that it's simple enough for my picky eaters to enjoy and yet its flavorful enough that if there's ever any leftovers the hubby will gobble them up!
And it's incredibly easy to whip up~ it only takes about twenty minutes {hooray}!
Pumpkin Chocolate Chip Muffin 
  • 1-1/2 cups all-purpose flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 tsp. ground cinnamon
  • 1/2 cup PediaSure® Grow & Gain Shake 
  • 1/4 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1 large egg
  • 3/4 cup canned pumpkin puree
  • 1/2 cup mini semi-sweet or milk chocolate chips

  • 1. Preheat oven to 350°F 
  • 2. Grease muffin tins and set aside. 
  • 3. In a large mixing bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. 
  • 4. In another bowl, whisk together PediaSure Grow & Gain Shake, oil, sugar and egg and pumpkin puree mix until well-blended.
  • 5. Fold in chocolate chips. Spoon batter into muffin cups, about 2/3 full. Bake 15 to 18 minutes, or until a wooden toothpick inserted into center comes out clean.
