Easy Mexican Tortellini

With the busy back to school season in full swing, I have been testing out a few new recipes to help make the transition a little easier and more enjoyable. One of the recipes we have really enjoyed is this Mexican tortellini dish~It's a creamy, hearty meal  filled with lots of Mexican flavor.  
I've got a little secret to share. I made this yummy meal with the help of BUITONI® {one of my favorite Nestle products}. I usually make a trip to Walmart before the kiddos get back in school and stock us up on these, STOUFFER'S® skillets, and some OUTSHINE® fruit bars. They're really delicious and make it easy to spend quality time together at the dinner table.
When I went back home to California and visited family a couple months ago, I was reminded of what a big part of our Mexican culture is spent in the kitchen and enjoying food with one another. It always feels like a celebration when we get together!

  Sometimes, I think I focus too much on my kids getting in "X" amount of calories/food-in per day, that I forget about the feelings I'm evoking or the atmosphere I am creating. I feel like it's up to me, the Mexican momma of the family to keep this tradition alive in our home and make each meal not just enjoyable but a happy memorable time!  
Okay, back to the dinner! I wanted to add a little Mexican flair to this meal, so after I cooked the tortellini in a skillet I simply threw in a couple things in to make it my own. I diced up grilled cactus, tomatoes, onion, cilantro and olives then tossed them in with the tortellini and married all the flavors with the juice of a lime. 
I love how easily it all came together!  And it was so good! Now I can add one more easy back to school dinner to my Rolodex of recipes! If you're wanting a little extra flavorful inspiration be sure to check this pinterest board out! 
 Most nights, we like to finish the evening with a better-for-you dessert and these summer nights that's meant Outshine fruit & yogurt bars! They are so refreshing and delicious!
Here's the Mexican Tortellini Recipe:
* 1 package of BUITONI® three cheese tortellini 
* 1 cup of diced cactus {canned in the Mexican aisle next to the pickled jalapenos}
*  2 chopped tomatoes 
* 1/4 cup minced onion
* 1/4 cup sliced black olives
* 1/4 cup chopped cilantro
* 1 lime

1. Start by boiling the tortellini {per the package instructions}.
2. Next saute the cactus for two minutes {or until it starts to blacken}, then remove from     heat & set aside.
3. Drain pasta and place in serving bowl.
4. Mix in the cactus, tomatoes, onion, olives, cilantro and juice of lime into bowl with         your pasta.
5. Then, add a pinch of salt & enjoy!
