M&M Buckeyes = Tastiest Truffles

With Halloween basically here already, I thought I'd share one of my favorite ways to use-up extra candy. For this recipe I used M&M's but you can easily modify it to garnish with your favorite chocolates! 
Have you had the chance to try buckeyes before? If you haven't, then you're in for a real treat:D! They are absolutely delicious and always leave you wanting more! 
They're essentially chocolate covered peanut butter truffles. But Today's variety also has mini M&M's® peeking through, for a sweater taste & whimsical look.
I also covered a few of these completely in chocolate & topped them with crushed M&M's® for a slightly different look. Which do you prefer?
 I really liked how these truffles turned out & the great part about these is that if you have leftovers you can easily freeze them & bring them out for your next gathering.
Here's how you make them...
You'll combine peanut butter, confectioner's sugar, butter, vanilla & salt in a bowl & mix until soft & crumbly.Then you'll add the mini M&M’S® into the dough & refrigerate.
Next you will heat your chocolate in a microwave-safe bowl {in 30 second increments} until chocolate has melt. Then you'll roll them into 1 inch balls and start dipping.
Dip the peanut butter balls three quarters of the way for traditional "buckeye" treats or all the way for the classic truffle look.
For a cleaner truffle, be sure to tap the bowl to remove the excess chocolate. 
Then place on parchment paper and stick them back in the refrigerator to let the chocolate set.

M&M’S® Peanut Butter Truffles

Ingredients:

  • 3/4 cup creamy peanut butter 
  • 1/2 cup unsalted butter, softened 
  • 3 1/2 cups confectioners’ sugar
  • 1/2 cup mini M&M’S® 
  • 16 ounces semi-sweet chocolate chips
  • 1 table spoon vegetable oil
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt

  • Directions:

    1. Line two baking sheets with parchment paper & set aside.
    2. Mix the butter on medium speed in a large bowl until creamy. Then, add the peanut butter, vanilla, and salt. Combine until creamy. Add the confectioners' sugar and continue mixing until everything is combined. The mixture is supposed to be a little soft & a bit crumbly. Next you'll add the M&M’S® into the peanut butter dough.
    3. Start rolling peanut butter dough into 1-inch balls and place on a baking sheet. 
    4. Chill peanut butter balls in the refrigerator for 30 minutes to 1 hour {or until firm}. During the last few minutes of the chilling time, begin melting the chocolate. You can melt the chocolate in a microwave-safe bowl with your oil{in 30 second increments}.Stirring after each increment until completely melted and smooth. Let the warm chocolate sit for 3 minutes to slightly cool before dipping. 
    5. Remove peanut butter balls from the refrigerator and dip them in the chocolate using a dipping tool. When dipping, you can fully submerge the truffle or submerge the peanut butter 3/4 of the way {so they look like buckeyes}. When lifting the truffle out of the chocolate, be sure to tap the dipping tool on the side of the bowl to remove excess chocolate.
    6. Place balls back onto your baking sheets after you dip each one. Then place back in refrigerator to allow the truffles to completely set.
