Lattice Raspberry Apple Cobbler Recipe

If you're looking for an easy Raspberry Apple Cobbler recipe, to get your sweet cinnamon apple fix, you've come to the right place! It's kind of like all the best parts of pie, but with a fraction of the effort! 
I just love cooking with apples, especially in the fall when they're in season. They’re so juicy, crisp and delicious, plus they always give me a tasty reason to make my house smell like cinnamon. 

This past week I decided to experiment a little and combine my love for apples & raspberries into my favorite cobbler recipe. The end result was truly heavenly, so I thought I'd share this sweet, indulgent treat with you all;).

One thing I really appreciate about cobbler, is that it's ridiculously easy to make, and as close to fail-proof as you can get. I switched things up a bit, by adding a lattice crust over top, to give it a slightly more elegant look. I know it's a small variation, but I love how it turned out.
You could make this in a pie dish, but if you want to serve it for Thanksgiving or a special event, than this darling Le Creuset Heritage Tart Tatin Dish is the way to go. It makes every dessert 10x more enticing and appealing, I'm kind of obsessed with it!

Lattice Raspberry Apple Cobbler
Ingredients:
Pastry
cup all-purpose flour
1/2 cup shortening 
1/2 teaspoon salt
3-4 tablespoons cold water 
Filling
1 cup all-purpose flour
2 1/2 cups fresh apples, peeled & thinly sliced
2 1/2 cups fresh raspberries
3/4 cup sugar 
1/8 teaspoon salt
1/2 cup cornstarch
1/2 teaspoon ground cinnamon
1/4 teaspoon nutmeg
tablespoon fresh lemon juice
tablespoons butter

Directions:

1. Heat oven to 400ºF. In medium bowl, cut shortening into flour and salt, using pastry blender or crisscrossing 2 knives, combine until particles are very small. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost cleans side of bowl.
2. Gather pastry into a ball. Shape into a flattened round on lightly floured surface. Roll pastry into circle then cut into 1 inch vertical strips and set aside.
3. In large bowl, mix sugar, cornstarch, flour, cinnamon and nutmeg. Gently stir in apples and raspberries. Spoon fruit mixture into baking dish. Sprinkle with lemon juice. Cut butter into small pieces; sprinkle over fruit mixture.
4. Place 5 to 7 strips across filling. Weave a cross-strip through center by first folding back every other strip going the other way. Continue weaving until lattice is complete, folding back alternate strips each time cross-strip is added.
5. Cover lattice top with aluminum foil to prevent excessive browning; remove foil for last 10 minutes of baking. Bake 50 to 60 minutes or until crust is golden brown and juice begins to bubble through lattice crust.
