Strawberry Avocado Spinach Salad + Berry Vinaigrette Recipe

While it’s not quite summer yet, strawberries seem to be popping up in every store I go at the moment. So, I picked up a few cartons of these delicious strawberries today and couldn't wait to make my Strawberry avocado spinach salad.
I have been on a health-kick lately (specifically since finishing my marathon & realizing I could do more to better my health), so this refreshing salad was exactly what I needed to nourish my body and satisfy my cravings hunger.
The best thing about this recipe is that it's so incredibly simple. Sometimes the best recipes are the ones that aren't really even recipes at all. They're just a wonderful and tasty result of taking the basics and adding a simple twist (by incorporating different toppings, meats or dressings). This strawberry avocado spinach salad is exactly one of those "non-recipes" that I go back to time and time again. Today I'd love to share with you one of my favorite dressings that I pair with it- Strawberry Vinaigrette.
Strawberry Avocado Spinach Salad & Strawberry Vinaigrette Dressing Recipe:
INGREDIENTS

Salad
2 cups of fresh baby spinach
1 cup of Romaine lettuce
1 cup sliced fresh strawberries
1 oz crumbled Feta
1/3 avocado, sliced
1  chicken breast, grilled & sliced
8 almonds sliced (optional)

Dressing
1 Tablespoon fresh lemon/lime juice
1/4 cup Avocado oil
1/4 cup balsamic vinegar
5 Raspberry
2 Strawberries
1 tsp honey
1/2 tsp chia seeds (optional)
salt to taste

DIRECTIONS:
For dressing- simply place all ingredients in blender and blend until smooth.
For the salad:
1. Place the chicken on a hot grill pan and cook for 3 minutes then flip the chicken breast and repeat for another 3 minutes.  
2.Reduce heat to medium low and cook the chicken for 20 minutes more, turning every 5 minutes. 
3.Once it's thoroughly cooked, remove from heat and slice into ¼ inch slices.
4. Arrange the spinach, lettuce, strawberries and avocado in a bowl. Lightly toss with the dressing. Then add the sliced chicken and top with feta and almond slices.
