School Lunches Your Kids Will Actually Eat

Breakfast may be the most important meal of the day, but if you ask me, lunch runs a close second! This year, we've made the switch to a plant-based diet and I am determined to have my kids eat healthier.

Here are the rules for my kids’ lunch box ideas:

*It must have some protein.
*It must have a carbohydrate.
*It must have a fruit or vegetable.
*Most importantly – the kids have to enjoy it!  
Lucky for me my girls never ask for anything too fancy for their lunches. They are perfectly happy with peanut butter and jelly sandwiches. They especially love it if it's layered with fresh fruit! 
Over the last couple of months, I have realized that organic eating can be easy, enjoyable & affordable. 
The trick is to go back-to-basics, and only purchase things your family will actually eat. Opt for clean, simple, healthy ingredients, and only use trusted organic products; like Alpine Valley Bakery.

2. Fruit "Sushi" Rolls - made with whole grain wraps, peanut butter, bananas & craisins.
3. Parfaits with yummy toppings on the side.
4. Smart Deli "Meat" & "Cheese" Kabobs
5. Zesty Mexican Tuna salad (Ceviche), with chips.
