Chopped Harvest Salad with purple roasted potato & lime vinaigrette

Thank you Potatoes USA for sponsoring this post. Make a delicious and convenient meal for your family tonight with potatoes!
If you're on the look out for a new hearty, flavorful salad that is fresh and colorful, stop right here, because it doesn't get much better than this!
There are so many components to this salad that help to set it above the rest (at least for me).

First, it has chopped greens, so it adds a nice fresh element to it. The dried cranberries & pomegranate are super sweet, full of texture and of course delicious. The feta cheese reigns in all the sweetness and helps to balance the salad perfectly.
The best part of this harvest salad are the forkfuls of purple potato which give it a combination of sweet and savory flavor, and adds a huge heartiness-factor.
This can easily pass as a complete meal.
I can’t forget the lime vinaigrette- it’s simple, sweet and perfect. This is my go-to vinaigrette!

I had Kyle and my sweet friends try this yesterday, and they really enjoyed it as well. So, I think this will become a regular in our rotation.
