A Flavorful Better-For-You Summer Recipe

Now that summer has officially begun, my mind is racing towards all the delicious grilling recipes I want to make. Growing up in Southern California I got used to having Carne Asada tacos on the regular, but I know that's not exactly great for me, so I've modified the recipe to lighten it up a bit. This grilled steak salad is no exception! It got a heart-healthy boost by simply swapping out a few ingredients like extra virgin olive oil for Mazola® Corn Oil, guacamole for a pinch of feta cheese, and opting for a thinner cut steak. I also added a ton of veggies to add variety and flavor into the meal.

As good as the salad is, it's the dressing that's the real show stopper and completely finishes the dish!
Over the years Mazola Corn oil has become a household staple for all of my Mexican cuisine, but recently, I've found that it's such an all-purpose, cholesterol free cooking oil and it's a great heart-healthy choice for the family. You can use it for baking, grilling, sautéing, marinades or like I did in a dressing. The flavor is pretty mild/neutral so it lets the natural flavor of the food stand out. Plus Mazola has a smoke point higher than most cooking oils at 450° F, so it performs well in a variety of cooking applications.

2 C grilled flank steak, chopped
1 C chopped tomato
½ C slivered almonds
½ C sliced roasted red pepper
½ C dried cherries
½ C Feta Cheese, crumbled
1 bag of spring greens 

For the Dressing
¾ C Mazola Corn oil 
⅓ C lime juice
⅓ C lemon juice
1 tsp lemon zest
1 Tbsp dried minced onion
¼ tsp red pepper flakes
2 Tbsp white vinegar
½ tsp salt
½ bunch cilantro, chopped
1½ Tbsp honey
1/8 tsp spicy brown mustard

1. For the Dressing: Place all ingredients into a blender. Blend until smooth then set aside.
2. Assemble salad, starting with the greens, steak, bell peppers, tomato, almonds, dried cherries, feta cheese and pour dressing over it. Enjoy!
